Heather honey

This is the crème de la crème of honey and is
harvested after much hard work. The hives are physically taken to the High Peak
moors in August once the Calluna or Ling heather is in bloom and left in place
for 5-6 weeks. In a good year, not only do the bees fill the brood box with
their winter feed, but a surplus, hopefully, is gathered to be harvested and enjoyed. In
a bad year the heather can fail completely. The heather honey is cold pressed to separate it from the wax cappings before being bottled to produce the distinctive strong flavoured honey, enjoyed by the connoisseur. Available with the same label picture as found on the wild flower honey jar. |
